Green Apple Salad Dressing I recently headed to Garth Newel Music Center for a story - that story will come in the next few days, but I had to share this recipe I got from their Executive Chef, Josh Elliot. Josh and I had a nice conversation and I found out this guy has quite the following. He used to own a restaurant and catered numerous events and has cooked in just about every single person's home who lives in Bath County, Virginia. Trust me, if you live in Bath County, you know Josh Elliot's cooking. Here's an EASY salad dressing that he prepared for lunch for the staff the day I was visiting for my upcoming story. 1 Green apple Vinegar (1/4 cup) white or apple cider vinegar (any will do) ¼ cup of sugar Green onions Blend.. Then Emulsify with olive oil That's it! He also made a strawberry and raspberry vinaigrette dressing as well. All you do is substitute those for the apple. You're welcome!!
My recent travels took me down to Galax, Virginia to feature the area for our ongoing series. I have never been there before, but heard a lot about it from a friend of mine who is from this area. She often talked about small town living and the limited shopping that's available. But see, she's really a city girl at heart, and you can't blame the gal for wanting to go somewhere that has an Ann Taylor's LOFT and a Gap close by. And this is not the place to go if you want the latest in women's fashions. However, she neglected to describe how steeped this place is in its music history - and it's a must-visit if you're into old time mountain music. Galax is now known as the World's Capital of Old Time Mountain Music. It used to be an area known for its furniture and textile industry, however, after much of that industry went overseas, it had to reinvent itself. And it has. I just read a little story on my Bible app about a woman having a “normal” day with someone, she doesn’t mention who it was, but it was just an ordinary day – with no special plans. The two decided to have lunch outside on a beautiful day, soaking up the sunshine, talking and sharing a couple of laughs. Then, this person whispers: This is going in my “happy file”. She goes on to explain that her happy file was her record she kept of God’s simple blessings, those moments in time with a little extra spark. You know, those times when you look back and think about them and they make you smile? What a concept, right? A file of good memories doesn’t have to be an expensive vacation, and well-thought-out, busy day filled with activities. I can be simply a moment in time that makes you smile. I love this idea and plan on keeping my own “happy file” of the things that happen each day that make me happy and appreciative of all that God has given me. And when I think of those
